Let's break it down: 7 means there is 0.7% carbon, CR17 means 17% chromium with MoV indicating added molybdenum and vanadium.
Carbon is added for hardening, strengthening and a lasting edge. To enhance the knife's properties, other elements are blended into the alloy. Chromium provides rust and corrosion resistance, while molybdenum and vanadium add strength and durability. 7CR17MOV is metal with a unique balance of sharpness, durability, rust-resistance, and -- most importantly -- edge retention.
The handle is made with G10, a composite material made with fiberglass and epoxy. It is very similar to carbon fiber, just made with fiberglass instead of carbon threads. It is durable, provides a good grip, and keeps the knife in perfect balance.
Simply hone the edge before every use, clean it after you use it, and have it professionally sharpened 1 or 2 times a year. Follow these simple steps and you will get years of outstanding performance from your knife.
We recommend honing your knife before every use. Honing pushes the edge back into alignment. No actual metal is removed, it's simply repositioned. For EDGE knives, use a honing steel of Rockwell hardness HRC 60 or more.
Although honing should be done before every use, actual sharpening, which mean grinding away material from the edge, should be done only 1 or 2 times a year for normal use. To get the same sharp edge and cutting performance, have it sharpened to 12 degrees.
We don't recommend it. Although testing reveals that the EDGE Knife can withstand the harsh environment of the dishwasher better than our competitor's knives, we advise you to clean it by hand by wiping the blade with a soapy sponge or towel, rinsing it off, then drying.
Lubricating the blade with 1 or 2 drops of mineral oil, especially if it's not going to be used for a while, may extend the life of your knife and help to resist corrosion.
We offer a 60 day return policy. As long as your knife is not damaged or abused, you may contact us for a return authorization via email at support@edge-knives.com, and return it within 60 days of delivery no questions asked.
